Founded in 2024, Wine Amphorae 7.0 was born from the long research of an enologist.

After more than 30 years of experimentation, Stefano Parisi developed an innovative amphora, capable of enhancing the identity of the wine without external interference, thanks to the use of advanced nanotechnology. We have transformed an ancient winemaking method into a state-of-the-art solution, ensuring ideal aging for each wine, without the release of certain characteristics from the wood vessel to wine.

THE STORY OF WINE AMPHORAE 7.0

In my lifelong journey in search of the perfect wine, there have been three pivotal moments, three 'photo memories' engraved in my memory.

The first flash is from 1995, a tasting of red wine in a Georgian amphora, where I was struck by its minerality, even though there was a hint of wet earthenware.

The second flash is about Florentine craftsmanship, and meeting and chatting with the owner of the “TERRACOTTE ARTIGIANE FIORENTINE” kiln, which gave the input to a first collaboration in 1997 to create wine jars and amphorae. It was a moment that marked the beginning of my passion for amphorae and their experimentation, in search of an amphora that would not impart any hint of wet earthenware to the wine and would have a much lower porosity.

The third vivid memory is the face of Gianni Fochi, professor of Inorganic and Particle Chemistry at the Faculty of Science of the Normale' in Pisa. It was 1999 and his theory on the dynamic charge equilibrium of atomic particles dazzled me. The idea of an electromagnetic field tending to be spherical, a form that is synonymous with equilibrium in nature, opened up a world of possibilities for me. 

I thought that if wine found its ideal place of making and evolution in a sphere, it could reach its maximum expression of equilibrium among the components (acids, mineral salts, polyphenols, etc.), and consequently we would obtain spontaneously balanced wines.

Thirty years have passed since then. Years of research, of passion, of study. Years that led me to create Wine Amphorae Settepuntozero, a company dedicated to one great mission: molding Sphera, the spherical-shaped amphora made of passivated terracotta from Impruneta and optimized with integrated German nanotechnology.

Sphera was born from an ancient inspiration, the Roman “dolia” (“dolium” in the singular), large spherical earthenware containers used to store and transport wine and other foodstuffs. We studied the original dolia, those unearthed in the excavations at Ostia Antica, to bring to life an amphora that would encapsulate the millennia-old wisdom of man and the perfection of the spherical shape.

Sphera is the culmination of a journey that began thirty years ago, a dream taking shape, a tribute to wine that tends toward perfection.
